Lemon grass(1 stalk);
Red chilli (1 x mild chilli);
Lime leaves(x 3 leaves),
Coriander stalks(small handful),
Garlic (3 cloves) ,
Onions (1 medium),
Root ginger (25 g) and coconut milk(150g),
25 g cornflour & water paste

Ingredients for garnish:

Lemon grass(1 stalk);
Red chilli (1 x mild chilli);
Lime leaves(x 4 leaves),
Coriander leaves shredded (handful),
Spring onions (x 2),
Root ginger (30 g),
250 g firm meaty white fish

Fish and Tips:

Wine Recommendation: Chenin Blanc

– Don’t allow the stock to boil, instead very gently simmer. Only allow the stock to simmer for 25 minutes. Skim any foam build up from the surface during the simmer.
